GLUTEN-FREE POP-OVERS

Pop-overs are  one of the most delectable of all bread products, especially great with roast beef.

PUT INTO A BLENDER:
one-half cup of gluten-free flour
2 eggs
one cup of room temp milk
one tablespoon butter at room temp
1/8 teaspoon of xanthan gum
Blenderize well while oven is warming to 400 degrees
Pour mix equally into well-greased (coconut oil or grape seed oil) muffin sized cups or drop biscuip pan, etc

Bake at 400 degrees 25 minutes. Turn heat down to 350 degrees and cook another 15 minutes. Remove from pans and eat while very warm!
